2 acorn squash
1lb ground turkey
1/2 c. ea. onion, bell pepper & celery, diced
4 mushrooms, chopped
4 eggs
2tbsp. marinara
1 c. cheddar cheese (grated)
feta cheese (optional)
fresh spinach (optional)
garlic salt
basil
thyme
paprika
mineral salt
Italian seasoning

- Arrange split squash open-face in a casserole dish. Put 1tbsp butter in each “bowl.” Sprinkle w/ salt and pepper. Bake at 450F for 1hr. (You will pull them out 30-40minutes in to stuff).
- Meanwhile, brown turkey and onion in a skillet. Add other veggies and seasonings w/ a little olive oil. Remove from heat. Stir in marinara and eggs until well combined.
- 30-40minutes into the squash’s bake time, take them out of the oven. Use a spoon to baste the edges of the squash with the melted butter. Fill the squash bowls w/ the turkey mixture. Return to the oven for the remainder of cook time.
- Top with cheddar or feta cheese and eat!
